What you will do

• Ensure your work station is in a clean and orderly fashion at all times.
• To ensure the food quality and preparations, presentations are of the standards set by the Sous Chef/Executive Sous Chef.
• Ensure all dishes prepared are in accordance to the standard recipe cards.
• Follow the set standards concerning the wastage and spoilage of all food items.
• Make sure all cold rooms are cleaned and food is stored correctly and covered at all times.
• Ensure all items stored and used have the correct date and are of correct quality.
• Make sure all equipment used by yourself and subordinates is maintained correctly and you have been instructed fully in the usage of the equipment and are fully aware of the safety rules and regulations governing the equipment.
• Ensure all food items used have been requisitioned using the correct procedure.
• Make sure you are fully aware and familiar with all the company’s standards in Safety, Health and Hygiene from basic first aid to fire evacuation procedures.
• Supervise and train your assistants at their designated work stations in both practical and theory.
• To follow all assignments given to you by the Sous Chef/ Executive Sous Chef on a daily basis.
• Ensure all products are prepared in accordance to the standards set by the Sous Chef /Executive Sous Chef ensuring the portioning presentations meets the standards.
• Ensure all your subordinates report to their work station at the correct time and in the correct attire.
• Assist in the preparation of duty rosters and holiday charts.
• Assist in the daily food requisitioning of perishable items.
• Plan your week duties to allow adequate training of your subordinates and develop programs for your staff.
• Liaise with the Section Chef in creating new dishes and concepts.
• Ensure the section/department functions according to the standards and procedures set in the absence of the Section chef.
• Ensure all food is prepared according to the standards set in the recipe cards.
• Ensure your work to train and develop yourself and your subordinates.
• Be prepared to assist in tasks and duties that may be out or away from your immediate work station.
• Continue to strive for better performance of yourself and your team.
• Demonstrate practical knowledge of your subject in line with standards associated with a five star hotel operation.
• Ensuring all Hotel policies and procedures are correctly observed and followed.
• Performing any additional tasks as delegated by management or guests to ensure our guests receive outstanding service.

What you are good at

-Can communicate well in English both writing and speaking
-Computer knowledge
-Minimum 4-5 years of experience in the related field
-Experience in 5 stars hotel
-Bakery/ Pastry / Confectionery experience is a must
