• To supervise the daily preparations of all food for kitchen outlets.• To ensure all the food prepared and cooked to the highest standards in quality and presentations according to standards set by the Executive Chef/ Executive Sous chef• To monitor with inspections all food items received daily through hotels receiving bay to recommend rejections for sub-standard food products at receiving area.• To ensure all operating equipment mechanical etc. is properly maintained and in good clean condition at all times.• Ensure all kitchens are following the correct portion control standards and monitor the overall wastage and spoilage of food products.• Admin duties including the operations of duty roster, holiday programs, monthly attendance, accident reports, disciplinary reports, daily food market list, consultations in regards to sourcing of new food products.• Attending departmental meetings, food & beverage weekly, daily kitchen briefing, liaising with Banquet in overseeing functions planned and forthcoming.• Ensuring the stewarding department has the appropriate cleaning schedules for daily, weekly, monthly programs, including night cleaning, deep cleaning cold rooms, fridges, etc.• To ensure all kitchen personnel have reported to these designated work station in the correct attire and the following of Health and Safety procedures laid down by the Executive Chef and Hotel Management.• Having all cooks leaves their working areas clean and tidy as and when they arrived.• Working with the Executive Chef/ Executive Sous Chef in creating menu concepts, themes, dishes in line with international standards and creating a food quality of excellence in both presentation and taste.
