  • Responsible to supervise junior chefs or commis.
  • Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.
  • Ensure that the production, preparation and presentation of food are of the highest quality at all times.
  • Have excellent knowledge of menu creation, whilst maintaining quality and controlling costs in a volume food business.
  • Ensure highest levels of guest satisfaction, quality, operating and food costs on an ongoing basis.
  • Knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation.
  • Full awareness of all menu items, their recipes, methods of production and presentation standards.
  • Follows good preservation standards for the proper handling of all food products at the right temperature.
  • Control food stock and food cost in his section/kitchen.
  • Prepare Recipe for every additional or new Menu and one copy to Finance.
  • Prepare daily breakfast within estimated budget.
  • Operate and maintain all department equipment and reporting of malfunctioning.
  • Personally responsible for hygiene, safety and correct use of equipment and utensils.
  • Corporate with Finance department for monthly stock/ inventory process.
  • Purchase request and store requisition must be submitted according the hotel rules.
  • Checks periodically expiry dates and proper storage of food items in the section
  • Assess quality control and adhere to hotels service standards.
  • Carry out any other duties as required by management.
  • Giving the training to outlet staff upon the menu
  • Calculating the cost & ordering the necessary items for menu
  • Must taking action the outlets who do not follow up the rule & regulation of the hotel
  • Assist management in hiring, training, scheduling, evaluating, counselling, motivating and coaching employees serve as a role model.
  • Check cleanliness of dry store, chiller, freezer, store & kitchen area and storage method Instruct the cleanliness and storage of meat or vegetable seafood or fruits
  • Check the cleanliness of the stove in kitchen, machinery, kitchen area and stewarding area.
  • Sous Chef after gave the training of firefighting & check of kitchen cleanliness
  • Help to conserve energy and minimize wastage.

Job Requirements

  • High school education or diploma in culinary is required.
  • Basic computer skills and familiar with inventory systems.
  • Excellent understanding of various cooking methods, ingredients, equipment and procedures.
  • Previous Hospitality and Catering industry experience working at same level in a good-quality
  • restaurant or hotel.
  • One to five years of minimum previous experience required in a high volume kitchen or full-
  • service hotel.
