Provide leadership for all non-production operations including outlet performance, distribution, stock control, service quality, manpower deployment, and SOP compliance across the bakery–café network.
Core Responsibilities
1. Outlet Operations Excellence
- Lead and monitor daily outlet execution, service standards, hygiene, cash handling, and customer experience.
- Conduct weekly operational audits and enforce SOP discipline.
- Ensure menu availability and resolve escalations.
2. Distribution & Logistics Oversight
- Manage daily dispatch planning and route optimisation.
- Track delivery accuracy, timing, returns, and loading discipline.
3. Inventory & Stock Control (Outlets)
- Enforce FIFO/FEFO and prevent expiry/wastage.
- Validate daily stock reports and monthly stock counts.
4. Labour Productivity & Scheduling
- Approve schedules based on sales forecast and peak hours.
- Monitor labour cost %, staff discipline, and briefing routines.
5. Operational Readiness & Store Improvement
- Ensure readiness for campaigns, product launches, and equipment uptime.
6. Cross-Functional Coordination
- Work with Marketing, Finance, QC, and Warehouse for operational alignment.
7. Reporting & Insights
- Deliver daily/weekly dashboards with risks and recommendations.
