The Production Manager/ Central Kitchen Manager is responsible for ensuring our retail outlets have the right products at the right time. You will bridge the gap between sales forecasts and kitchen/factory output, optimizing inventory levels to minimize waste while maximizing on-shelf availability. To ensure the client's retail stores and delivery channels are always adequately stocked to meet customer demand, while simultaneously minimizing product wastage.

Job Description

  • Anticipate and forecast demand surges based on product seasonality and major cultural festivals to ensure 100% product availability without overproduction.
  • Develop baseline forecasts for daily, weekly, and monthly demand across all retail SKUs.
  • Translate demand plans into actionable Production Plans for the commissary or central kitchen.
  • Collaborate with Marketing and Retail Operations to adjust forecasts based on upcoming campaigns or new store openings.
  • Analyze historical sales data, buyer demographics, and market trends to build highly accurate pre-planning production models.
  • Work closely with Procurement to ensure raw material availability matches production spikes.
  • Manage and inspect production processes and equipment to ensure they are operational and in good working order for food production and staff handling.
  • Implement cost-saving initiatives without compromising quality.
  • Develop ways to improve sales and profit by improving product quality and processes with quality control team.

Job Requirements

  • Bachelor's degree in Food Science, Food Technology, Hospitality Management, Business Administration, or a related field.
  • Additional certifications in Food Safety, HACCP, GMP, or ISO standards are an advantage.
  • Minimum 5–8 years of experience in bakery, food production, central kitchen, or manufacturing operations.
  • At least 3 years in a managerial or supervisory role.
  • Experience in chain restaurants, bakery brands, FMCG, or food manufacturing industries is an advantage.
  • Experience managing large-scale bakery production and multiple product lines is preferred.
  • Experience with ERP systems or inventory management software is an advantage.
